Melinda’s Super Blackberry Trifle

Nothing is tastier on a warm summer day than a sweet and tart blackberry trifle. With a sweet and tasty blackberry sauce made with our own Superman blackberries, and a tangy lemon whipped buttercream, sandwiched between slices of angel food cake. You couldn’t ask for anything better!

I like to prepare a blackberry trifle for any event I attend! It’s a versatile treat and with the guaranteed deliciousness of our Superman Blackberries, you can never go wrong!

To make this trifle you’re going to need

  • A loaf of your favorite angel food cake
  • 2 Sticks of Butter
  • 1 Block of Cream Cheese
  • The Juice and Zest of one Lemon
  • 1 lb of our Superman Blackberries
  • 2 tsp Vanilla Extract
  • 1/2 cup Granulated Sugar
  • 1/2 cup Confectioners Sugar
  • 1/4 cup Heavy Cream
  • 1/8 tsp Salt
  • 1/8 cup Cornstarch

Begin by preparing your buttercream

  1. In a large bowl, add room temperature butter and beat with a hand mixer (or stand mixer) until creamy, about 1 minute.
  2. Add confectioner’s sugar and slowly mix until ingredients are fully combined. Then, whip at high speed for 2-3 minutes, or until light and fluffy.
  3. Add heavy cream, vanilla extract (and optional almond extract), and salt, then whip for an additional 2-3 minutes, or until light and fluffy. Add additional heavy cream as needed to reach desired consistency.

Next prepare your blackberry sauce

  1. In a small bowl, mix together the lemon juice and corn starch. Set aside.
  2. In a non-reactive saucepan, cook the blackberries and sugar over medium-high heat, stirring frequently, for about 3 minutes, or until the blackberries are broken down and have released their juices. Then stir in the corn starch mixture and bring the sauce to a low boil until thickened, about 1-2 minutes.
  3. Remove the saucepan from the heat and stir in the lemon zest. Set aside to cool.
  4. Once cooled, transfer the blackberry sauce to a re-sealable container and refrigerate until you’re ready to use it. The blackberry sauce can be stored in your refrigerator for 7-10 days.

Time to assemble our delicious trifle! Begin by creating a layer of angel food cake, next pipe a layer of your buttercream on top, make sure to cover the surface! Then, spoon some of your blackberry sauce equally across the layer of buttercream. Repeat this process until you reach the top of your dish!

And voila! A delicious trifle to share with friends, family, or strangers
